WATERCRESS FINGER SANDWICHES ANYONE?

Watercress is an aquatic plant in the family Brassicaceae (related to brussel sprouts).  They can be found near springs and are one of the few green things this time of year.  According to www.healthline.com, watercress is a nutrient powerhouse that is packed with vitamin K (https://www.healthline.com/nutrition/watercress-benefits).  It appears that watercress sandwiches were a tea-time treat.  Basically, make an egg salad, add chopped watercress and smear on the bread of your choice.  What makes it a finger sandwich is not the inclusion of fingers (ooh yuck!), but cutting the sandwiches into finger-like slivers.  Remember to stick your pinky out when eating them!
